Homemade Coconut Butter

Coconut butter is a very luscious nut butter, but can be really costly!
Not many people realise you can actually make your own at home, and its very simple, too.  And cheap! The only thing you need is dried coconut, it doesn't matter what kind (shredded, desiccated, flaked, sweetened, unsweetened...you could even try toasted!)

There are lots of ways to make use of coconut butter (besides eating it right off the spoon!) Its beautiful drizzled over roasted sweet potato, added to smoothies for an extra special something, and a hit of healthy fats, drizzled over oatmeal, or spread on toast, really, the possibilities are endless!

Coconut Butter

  1. Dried coconut* - the more you use, the easier it will be on your food processor.

  • Place all your coconut into your food processor
  • Blend until everything comes together, depending on how good your machine is, it will eventually come together as a thick white liquid, and you may have to scrape the sides a few times to help it along. I used a high speed blender and it took about 4 minutes total, but could take about 15 - 20 minutes, but again this will depend on your food processor.

*To give you an idea of ratios, i started out with 4 cups of desiccated coconut, and finished with a little over 400ml of coconut butter.
