Green Papaya Salad

After trying my first green papaya salad earlier this year in Bali, i fell in love with it!

This is a very simple salad, and it, being a salad, is a light meal, but its not light enough to leave you searching the cupboards for more food.

Green Papaya Salad

serves 2
  • Half a green papaya
  • 1 tomato, or about 10 cherry tomatoes 
  • 2-3 carrots
  • 1/2 cup peanuts, roasted
  • 1 avocado
  • Few sprigs coriander
  • 2 red chili's - adjust for your own spice level
Dressing:

  • 1 Tbs coconut sugar
  • 1 Tbs tamari
  • 1/2 tsp sesame oil
  • 2 Tbs lime juice - roughly 1 lime
  1. Thinly slice your carrots, papaya and tomato and combine in a bowl with some coriander.
  2. Slice the chili's and place on top of the salad with the left over coriander.
  3. Slice your avocado and place on top of the salad.
  4. For the dressing, combine all ingredients and stir to combine.
  5. Pour the dressing over the salad, and garnish with peanuts.
  6. Serve!
