This is a very simple salad, and it, being a salad, is a light meal, but its not light enough to leave you searching the cupboards for more food.
Green Papaya Salad
serves 2
- Half a green papaya
- 1 tomato, or about 10 cherry tomatoes
- 2-3 carrots
- 1/2 cup peanuts, roasted
- 1 avocado
- Few sprigs coriander
- 2 red chili's - adjust for your own spice level
Dressing:
- 1 Tbs coconut sugar
- 1 Tbs tamari
- 1/2 tsp sesame oil
- 2 Tbs lime juice - roughly 1 lime
- Thinly slice your carrots, papaya and tomato and combine in a bowl with some coriander.
- Slice the chili's and place on top of the salad with the left over coriander.
- Slice your avocado and place on top of the salad.
- For the dressing, combine all ingredients and stir to combine.
- Pour the dressing over the salad, and garnish with peanuts.
- Serve!
