Maple Caramelised Buckini's

I really love topping my smoothies and things with something crunchy, and i can't always afford to buy those expensive packets of buckini's, so i have figured out how to make them at home in my dehydrator. It's super simple, and a lot cheaper!

Buckwheat is not actually related to wheat, and is totally gluten free. High in fibre and protein, is great for digestion, lowering cholesterol and high blood pressure, and can even be helpful to manage diabetes as it does not lead to peaks in blood sugar

And with some special extra superfoods added in, these are not only good for you, but they are also great on top of things like ice cream, thick smoothies, yogurt, salads, chia pudding...the possibilities are endless!

Maple Caramelised Buckini's

  • 1 cup raw buckwheat - activated (soaked overnight at room temp, and then drained)
  • 2T maple syrup (or other liquid sweetener)*
  • 1t cinnamon (optional)
  • 1t maca (optional)
  • 1t lucuma (optional)

  1. Combine everything into a bowl and stir to combine.
  2. Spread over a dehydrator sheet (or if you're like me and haven't gotten any proper sheets yet, baking paper will work too).
  3. Dehydrate at 45 degrees overnight.

*If you wanted these unsweetened, just add a tablespoon or two of filtered water in place of the maple syrup.

I love these as a topping on some organic soy yogurt with banana slices, seeds and a drizzle of maple syrup!
