Protein Fudge Brownie

Being a vegan who doesn't eat grains or refined sugars, it's not often that i come across a brownie that i can indulge in, and it took me a while to come up with something that didn't taste awful and look like a giant mess.


This brownie is super fudgey, super high in protein, really easy, and only gets better as it cools!




Protein Fudge Brownie

28x8 inch tin
Dry ingredients:

  1. 30g Chocolate protein powder - or regular protein powder with an extra tablespoon of cocoa (i used Choc-a-lot protein by Vega)
  2. 100g soy flour
  3. Pinch salt
  4. 1/4 cup cocoa
  5. 1 tsp baking powder
  6. 1 pinch bicarb soda
  7. 3/4 cup coconut sugar
Wet ingredients:
  1. 1 over ripe banana, mashed
  2. 1 tsp vanilla
  3. 1 cup water
  4. 2T coconut oil, melted (other neutral flavoured oils will work too)
optional toppings: coconut cream, pomegranate, berries, etc.


  1. Preheat your oven to 180c and grease or line your tray with baking paper
  2. In a medium sized bowl, combine all dry ingredients
  3. In a smaller bowl, combine your wet ingredients 
  4. Pour the wet mixture into the dry mixture and stir to combine
  5. Bake for about 25 minutes, until firm to the touch and a few cracks have formed on top
  6. If you can wait, let it cool in the tray before serving!


I really recommend you top your brownie with coconut cream, its great on its own, but is totally lush with!
