Goji Bowl
1 big serving
- 1tsp dehydrated coconut water*
- 1/3 cup water
- 2/3 cup goji berries
- 1/2 cup blueberries
- 2 small ripe bananas
- 2 handfuls of ice - maybe 5-8 cubes?
- Put all of your ingredients (except ice) into a blender - I used my high powered blender (Froothie) and blend until nice and smooth
- Add your ice to the blender and blend until smooth
- Pour your goji mixture into a bowl, or a jar, or whatever you like to eat out of!
- Don't worry if it seems a little thin for your liking, leave it a few minutes and it will magically form a kind of jelly consistency (because you are magic)
- Pile on your toppings and dig in!
*I used loving earth's coconut water powder, though you could easily just replace the water in this recipe with coconut water
Get creative with your toppings, i used a few things i found in the cupboard, options are things like:
- Nut butters
- Seeds
- Buckini's - my recipe is here
- Extra berries
- Bee pollen or raw honey (if you aren't a strict vegan)
- Nuts
- A drizzle of maple syrup, agave, or coconut nectar
I topped my Goji Bowl with Coconut Butter, Buckini's, some extra goji berries, blue berries, linseeds, pepitas and a drizzle of maple syrup.
Definitely a breakfast worth getting out of bed for!
